The Shetland Sheep was brought to the Outer Hebrides by the Vikings over a thousand years ago, though it is thought their roots stretch back to the Iron Age. They are smaller than their more domesticated cousins, but they are renowned for being well-behaved and tasty! Shetland is a mellow meat, infused by it's wild Isle of Lewis diet. Recent research from Wales is impressed at the high Omega 3 levels in these beasts. The meat is of exceptional flavour with a gamey darker quality. Nick Nairn says it's his favourite breed because of the low fat content and simple preparation. Farmer, Derek Stuart-Brown, tells us that because of the slightly smaller joints they roast wonderfully in a blanket of rosemary and thyme. He also likes to glaze them in honey.
