The little herring boats arrive at Mallaig harbour in the West Highlands, and their 'Silver Darlings' are split and naturally brined for a few minutes (positively NO artificial colouring is added). Then in the kippering-shed they are smoked for almost eight hours over smouldering oak and beech chips. Their silver colour slowly and magically turns to copper, and the flavour is a wow! Each order will contain 2 x 225g Kippers. .
