It was while working at his first restaurant, Braeval, that Nick discovered the joys of not only cooking food but teaching others the skills necessary for creating memorable meals. Holding regular demonstrations sparked an idea at the back of his head, but it was to be over ten years before he set about converting an old piggery on his familiesÆ Port of Menteith estate into what has become ScotlandÆs foremost cook school.

There is growing concern that when it comes to the food we eat, important health and environmental issues are being forgotten in attempts to cut costs. Large corporations are exploiting farmers and endangering our high streets. Globally, unfair trade rules are crippling producers in the world's poorest countries and much of our food is unnecessarily transported, fuelling climate change. Friends of the Earth Scotland is doing something about it.

Royal Mile Whiskies was set up as a specialist malt whisky retailer, based on EdinburghÆs historic Royal Mile. An independent, Scottish-owned shop located in Scotland, Royal Mile Whiskies specialises in single malt scotch whisky, but also sells Irish whiskey, bourbon whiskey, grain whisky and blends. They won Whisky Magazine's 'Retailer of the Year' award in 2003 and 2004 and also have a shop in Bloomsbury.
