-4 salmon fillets -1/2 large lemon - juice -1/2 large orange - juice -salt and pepper -1 whole orange - zest -2 tablespoons brown sugar -1 tablespoon chilli powder -1 large garlic clove - minced -2 tablespoons butter - melted
Directions:
1. In a shallow dish large enough to hold the salmon, combine the juices,salt and pepper. Add the salmon, turning to coat with the marinade. Leave tomarinate at room temperature for 20 minutes, turning the fillets once.
2. Preheat the oven to 425F. Line a shallow baking pan with aluminium foil andgrease with a little of the melted butter.
3. In a small dish, combine the orange zest, brown sugar, chilli powder andminced garlic. Rub the marinated salmon with the brown sugar mixture. Place inthe pan and frizzle with the remaining melted butter. Bake for 8 to 12 minutes.
4.8 minutes will do for thin fillets (less than 1 inch) and no more than 12minutes for the thicker fillets.
