500g. cooked tripe 2 lit. water 4 egg yolks 2 tablespoons flour + cup cider vinegar
7-8 cloves garlic 50 g butter Cayenne pepper Salt
Instructions:
Cleanand wash tripe well, add 2 litres water and cook until tripe is tender. Chopand put back in stock. Mixwell egg yolks, flour, salt and 1 cup water, add tripe stock and warm. Putmixture in saucepan, boil 3-4 minutes. Mashgarlic cloves, mix vinegar. Add mixture in soup, boil. Cook butter and cayenne1 minute. Poursoup in bowls, put 1 tablespoon butter-cayenne mixture each, serve hot.
