-400g red split lentils -3 tablespoons sunflower oil -4 slices of gammon steak, finely diced, and a ham bone -2 medium onions, finely diced -3 carrots, finely diced -3 sticks celery, finely diced -3 cloves garlic, roughly chopped -1 bay leaf -3 sprigs parsley -1.5 litres of chicken stock -Salt and freshly ground black pepper
Instructions:
-Wash thelentils in a sieve under cold running water. Tip into a bowl and cover withwarm water. Soak for 30 minutes.
-Heat theoil in a large pan and add gammon, fry until lightly coloured. Mix in thevegetables and garlic and fry until soft. Drain the lentils and mix into thevegetables with the herbs and water. Add ham bone. Bring to the boil thensimmer gently until the lentils and vegetables are very soft - about 30minutes. Remove any scum.
-Removethe herbs and the ham bone, purTe with hand blender.Adjust the seasoning and reheat beforeserving.
